Sign completion deed (escritura de compraventa) before a notary and pay the balance — the notarial public deed is the standard legal formalisation of the sale (and required if you take a mortgage)

Spanish property completes in front of a notary: the escritura de compraventa is signed, the balance paid, keys handed over in the same sitting. The notary certifies legality rather than representing you — your lawyer does that — and as the title notes, the public deed is the standard formalisation (and unavoidable with a mortgage).
